Truffle Pizza

A simple, delicious pizza with a garlic butter base, mushrooms, melted cheese and fresh truffle shaved over the top after cooking.

Ingredients

1 pizza base, purchased or homemade

Our favourite is a pizza base made with sourdough discard

1–2 tablespoons plain butter, softened

2 small garlic cloves, finely grated or crushed

Brown mushrooms, sliced

Mozzarella or bocconcini

Parmesan, pecorino, tasty cheese, or another cheese of your choice

Fresh black truffle (Tuber melanosporum)

A small pinch of sea salt

Black pepper, optional

Use this recipe as a guide. The amount of mushrooms, cheese and truffle can all be adjusted to suit your taste and preference.

The amount of fresh truffle is up to you. Use a little for a gentle flavour, or more if you are feeling indulgent. It depends on your taste and your budget.

Preheat your oven to 220°C,

Mix the softened butter with the garlic.

Spread the garlic butter over the pizza base.

Sprinkle your favourite cheese mix over the base.

Add the sliced brown mushrooms.

Tear over the mozzarella or bocconcini.

Season lightly with sea salt and black pepper.

Bake until the base is crisp, the mushrooms are cooked and the cheese is melted and golden.

Remove the pizza from the oven.

Once the pizza is cooked, micro plane or shave fresh truffle over the top while the pizza is still hot. The warmth of the pizza will release the truffle aroma.

Serve straight away.

Tip

Fresh truffle is best added at the end. Do not bake it on the pizza, as the heat of the oven will reduce the flavour and aroma.
